Braised Pork Knuckle with Preserved Mustard Greens (Pressure Cooker Version)

Ingredients

  1. Pork knuckle 1 kg
  2. Salty preserved mustard greens 50g
  3. Sweet preserved mustard greens 200g
  4. Sliced ginger
  5. Garlic cloves
  6. Light soy sauce 2 tbsp
  7. Dark soy sauce 1 tbsp
  8. Water 200g

Step-by-Step:

  1. Blanch the pork knuckle, rinse and clean thoroughly.
  2. Cut the preserved mustard greens into desired length. Soak, rinse well several times to remove excess salt and grit.
  3. Dry-sear the pork knuckle until the surface is lightly browned.
  4. Add oil, ginger, garlic, and preserved mustard greens. Stir-fry until fragrant.
  5. Add light soy sauce, dark soy sauce, and 200 ml of water. Mix well.
  6. Transfer everything to the pressure cooker. Select the Braise/Stew function and cook for about 40 minutes, or until the pork knuckle is tender.

Remarks: stove cook will need 500g or more water.
