The Recipe: Summer Harmony Vermicelli

This dish is fast, healthy, and a vibrant reminder that coming together is always worth the effort.

Ingredients

  • Vermicelli: 2 small packs rice noodles (around 120g for 2 portions)
  • Bell Peppers: 1 yellow, 1 green (sliced into thin strips)
  • Carrots: 1 medium (shredded)
  • Onion: 1 medium (sliced into strips)
  • Cooking Oil: 2 tablespoons
  • Seasoning: 2 tablespoons soy sauce, a pinch of sea salt (and a dash of sesame oil if you’re feeling fancy! I add in my sriracha!)

Step-by-Step

  1. Prepare the Noodles: Boil your vermicelli just until tender—don’t let them get mushy! Drain and set aside.
  2. Sauté: Get your wok or skillet nice and hot with the oil. Toss in the onions until they’re fragrant.
  3. Add the Colors: Add the bell peppers and carrots. Stir-fry for a few minutes until they are bright and crisp-tender.
  4. The Big Mix: Toss in the cooked vermicelli. Pour the soy sauce and salt over the mixture.
  5. Finish: Stir everything together for about 2 minutes until the noodles are evenly coated and everything is steaming hot.
